Local food and wine

Brovada (in Friulian Brovade). Sour white rape fermented in vats with marc. This is a typical local product in Friuli; before the dawn of the potato, it was eaten as a side dish in many family homes in the winter. It comes ‘as is’, or can be sliced or grated; it can be eaten raw or cooked and is traditionally eaten with musetto [see below] and boiled meats.

Asìno cheese (in Friulian Salât or Asìn). Typical of Pieve d’Asio, this cheese is eaten fresh, matured for just 1 month, and has a soft, sweet texture. When left to soak in a salt solution (la salmuerie), it has a stronger, spicier taste and is harder. Delicious with grilled polenta.

Frico (traditional cheese bake). This consists of grated mature cheese, fried in a pan with melted butter (l’ont) to form a crisp, cheesy layer packed with flavour. In Spilimbergo, Frico is usually kept soft, with the addition of onion and/or potato. It was once a way for families to use the offcuts and scraps from cheese processing (lis coradelis), including the rind.

Musetto (in Friulian il Muset). This traditional cured meat dish in the Spilimbergo area has an unmistakeable flavour and consistency. Usually eaten with brovade [see above]. Together with salami (il salam) and sausages (la luianie), it represents the very best in local pork products. Salami fried in vinegar is a delicacy much loved by connoisseurs.

Red wines from Grave Cabernet Franc, Cabernet Sauvignon, Merlot, Pinot Nero and Refosco dal Peduncolo Rosso (il Rafosc).

White wines from Grave Chardonnay Friulano, Pinot Bianco, Pinot Grigio, Sauvignon, Traminer Aromatico, Verduzzo and Friulano (was Tocai).
